Hot Cross Bun Pudding

 

Ingredients Serves 4+

2 x packs of delux brioche hot cross buns

50g butter

a pot of lemon and lime marmalade

1 x orange (grated rind)

55g caster sugar

1 tbs plain flour

500ml crème fraiche

3 eggs

½ tsp vanilla extract

1-2 tsp icing sugar

cream or vanilla ice cream to serve

  1. preheat oven to 200℃/fan 180℃/gas 6

     

  2. Cut the hot cross buns in half, using the bottom halves of the buns, spread all of these with butter. then spread the top halves of the buns with the marmalade.

  3. Arrange the hotcross bun piece alternatively in a deep baking dish.

  4. Combine the caster sugar, grated rind of the orange, flour; add the crème fraiche, eggs and vailla extract. whisk until well blended.

  5. Spoon the mixture evenly over the hot cross buns.  bake in the oven for 30 – 35 minutes or until golden brown and set in the centre.  remove from the oven; cool for 10 minutes.  sprinkle with sifted icing sugar.

     

  6. Serve with cream or vanilla ice cream or both!!
